Katie Hussong has devised a sugar-free, dairy-free, oil-free ice cream made entirely with nutritious, whole plant-foods. We also love that it's so simple: no fancy equipment required, and the ingredients are all readily obtainable.
(You may want to hunt for the peppermint essential oil Katie recommends, but peppermint extract is just fine.)
Katie's website (www.katiehussong.com) is worth a visit, for one to learn how this professional nurse became a health coach in the process of healing herself. You'll also find more great recipes, health tips, advice on using essential oils and more.
2 bananas, peeled and frozen
1 avocado, peeled*
1 can coconut milk, solid portion only (scoop it out with a spoon)
2 tbsp maple syrup
1 tsp SuperLeaf Moringa powder
4 tbsp vegan carob chips (I like the "mini" version); or use your favorite dairy-free chocolate chip
* Or substitute an additional frozen banana for the avocado
Katie says, "Feel free to play around with proportions, according to taste. This one's just my personal preference. And it sure feels good to know I'm supporting an awesome cause AND eating a green superfood in my ice cream!"
When Katie refers to supporting a good cause, she's talking about Organics 4 Orphans (O4O), the humanitarian organization we founded as a way to make change in some of the world's poorest countries. We channel 100% of profits after business expenses to O4O's organic gardening, natural medicine, nutrition and income-generating projects. Learn more at www.organics4orphans.org
