This lush-looking smoothie comes courtesy of another Academy of Culinary Nutrition graduate, Ashleigh Grange, whose recipes, resources and classes for healthy living can be found at http://www.ashleighgrange.com/
Writes Ashleigh, "This mildly sweet, minty, cucumber-y smoothie is lusciously creamy because of the avocado and packed with healthy brain-boosting fats because of it. The Moringa powder adds powerful superfood nutrition to your morning or afternoon green smoothie!"
Avacados are a great base for Moringa. The green colour won't compete with Moringa's chlorophyll-rich shade, and the creamy texture offsets Moringa's more tannic flavours.
Freezing the cucumbers here is ingenious! What a great way to preserve cucumbers you don't get a chance to eat fresh.
Serves: 1 - 2
Prep time: 5 mins (+ freezing time for the cucumbers)
1/2 c. cucumber slices, frozen in advance
1 medium avocado, peeled
1 sweet red apple, cored
1/4 tsp. SuperLeaf™ Moringa powder
Juice of 1/2 lime
1/2 Tbsp. packed, fresh whole mint leaves
1 c. water (or more to desired consistency)
Bonus Tip: Freeze the cucumbers overnight to enjoy this cool smoothie for breakfast on a hot summer morning!
