Cool As A Cucumber Smoothie by Ashleigh Grange

Writes Ashleigh, "This mildly sweet, minty, cucumber-y smoothie is lusciously creamy because of the avocado and packed with healthy brain-boosting fats because of it. The Moringa powder adds powerful superfood nutrition to your morning or afternoon green smoothie!"

Avacados are a great base for Moringa. The green colour won't compete with Moringa's chlorophyll-rich shade, and the creamy texture offsets Moringa's more tannic flavours. 

Freezing the cucumbers here is ingenious! What a great way to preserve cucumbers you don't get a chance to eat fresh.

Serves: 1 - 2

Prep time: 5 mins (+ freezing time for the cucumbers)

Ingredients

1/2 c. cucumber slices, frozen in advance

1 medium avocado, peeled

1 sweet red apple, cored

1/4 tsp. SuperLeaf Moringa powder

Juice of 1/2 lime

1/2 Tbsp. packed, fresh whole mint leaves

1 c. water (or more to desired consistency)

Instructions

  • Freeze the cucumber slices until solid.
  • Once frozen, add the cucumber slices and the rest of the smoothie ingredients to a blender. Blend until smooth.
  • Add more water if you prefer for a thinner consistency.

Bonus Tip: Freeze the cucumbers overnight to enjoy this cool smoothie for breakfast on a hot summer morning!
